Is Saigon cinnamon Cassia cinnamon?
Yes. Saigon cinnamon is a type of Cassia cinnamon, but it is different than the Cassia cinnamon found in most grocery stores. The most common cinnamon is Chinese cinnamon. The oil concentration in Saigon is much higher, though, due to the optimal growing climate in Vietnam.
