    How to Use
    Prague Powder
    #1.
    1 teaspoon, 0.2 oz., or 5.67 grams per 5# meat
    1 2/3 Tablespoons, 1 oz., or 28.35 grams per 25# of meat.
    For 20% brine pump
    2 2/3 Tablespoons, 1.6 oz., or 45.36 grams per gallon water.
    It is
    HIGHLY recommended
    you use a scale to weigh your cure as
    volume measuring is not accurate
    .

    Do not mix cure into HOT water, use cool water only.
    USDA requires between 120 – 200 Parts Per Million of "in-going
    curing agent
    " for brine cured meat. Per USDA Processing Inspectors Handbook, Pg 12. Using the above amounts gives you approximately 160 PPM.
